A completely different way to enjoy salmon. Fillets marinated in a vibrant tandoori spice blend and grilled until slightly charred and perfectly tender. Rich in omega-3 fatty acids, high in protein, and served with a light cucumber mint raita that brings everything together beautifully.

Ingredients
  • 2 salmon fillets (approx. 150g each), skin on
  • 3 tablespoons low-fat natural yoghurt
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon chilli powder
  • Juice of 1 lemon
  • Salt and black pepper
  • Fresh coriander to serve
  • Lemon wedges to serve
For the Cucumber Mint Raita:
  • 100g low-fat natural yoghurt
  • ½ cucumber, grated and squeezed dry
  • Small handful fresh mint, finely chopped
  • Juice of ½ lemon
  • Salt to taste

Directions

CONVENTIONAL METHOD
  1. Mix yoghurt, garlic, ginger, cumin, paprika, coriander, turmeric, chilli powder, and lemon juice together in a bowl until combined.
  2. Score salmon skin with 2-3 diagonal cuts. Season with salt and pepper.
  3. Coat salmon fillets generously with tandoori marinade. Leave for at least 15 minutes – longer if time allows.
  4. Preheat the grill to high. Place salmon on a lined baking tray skin-side down.
  5. Grill for 12-15 minutes until salmon is cooked through and slightly charred at the edges.
  6. Meanwhile mix all raita ingredients together in a bowl. Set aside.
  7. Scatter fresh coriander over salmon. Serve with cucumber mint raita and lemon wedges.
THERMOMIX METHOD
The grill is essential for the charred finish on this recipe. The Thermomix makes the marinade and raita effortlessly:
  1. Add garlic and ginger to Thermomix bowl. Chop 3 sec/speed 5. Scrape down the sides.
  2. Add yoghurt, cumin, paprika, coriander, turmeric, chilli powder, and lemon juice. Mix 15 sec/speed 3.
  3. Score salmon skin and season with salt and pepper. Coat generously with Thermomix marinade. Leave for at least 15 minutes.
  4. Preheat the grill to high. Grill salmon skin-side down for 12-15 minutes until cooked through and slightly charred.
  5. Without washing the bowl add all raita ingredients to Thermomix. Mix 10 sec/speed 3. Scrape down and mix again 5 sec/speed 2.
  6. Scatter fresh coriander over salmon. Serve with Thermomix cucumber mint raita and lemon wedges.
