The ultimate summer salad. Juicy king prawns with sweet mango, crisp salad leaves, and a light lime and chilli dressing. High in protein, naturally low in carbohydrates, and genuinely impressive. Ready in 15 minutes with no cooking required for the dressing.

Ingredients

  • 300g cooked king prawns, peeled
  • 1 ripe mango, peeled and sliced
  • Mixed salad leaves
  • 1 cucumber, sliced
  • 1 red pepper, thinly sliced
  • Small handful fresh mint
  • Small handful fresh coriander
  • 2 spring onions, finely sliced
  • 1 red chilli, finely sliced (optional)
  • Lime wedges to serve
  For the dressing:
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1 teaspoon fresh ginger, grated
  • 1 garlic clove, minced
  • Salt and black pepper

Directions

CONVENTIONAL METHOD
  1. Whisk all dressing ingredients together in a small bowl. Set aside.
  2. Arrange salad leaves on a large serving plate.
  3. Top with mango slices, cucumber, red pepper, and spring onions.
  4. Add prawns on top. Scatter fresh mint and coriander over everything.
  5. Drizzle dressing generously over the salad.
  6. Add chilli if using. Serve immediately with lime wedges.
  THERMOMIX METHOD
  1. Add garlic and ginger to Thermomix bowl. Chop 3 sec/speed 5. Scrape down sides.
  2. Add lime juice, olive oil, honey, salt, and pepper. Mix 15 sec/speed 3.
  3. Arrange salad leaves, mango, cucumber, red pepper, and spring onions on a serving plate.
  4. Top with prawns and scatter fresh mint and coriander over everything.
  5. Drizzle Thermomix dressing generously over the salad.
  6. Add chilli if using. Serve immediately with lime wedges.
