HALLOUMI & VEGETABLE SKEWERS

Golden grilled halloumi threaded with peppers, courgette, and red onion, finished with a zesty lemon and herb dressing. A vegetarian option that genuinely holds its own on the barbecue, with squeaky, salty halloumi providing the protein. Ready in 20 minutes and just as good under the grill when the Irish weather has other plans.

Ingredients

  • 225g halloumi, cut into 3cm cubes
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 1 courgette, cut into thick half-moons
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • Juice and zest of 1 lemon
  • 1 garlic clove, minced
  • Small handful fresh mint, chopped
  • Black pepper
  • 8 skewers (soaked in water if wooden)

Directions

OPTION 1 – CONVENTIONAL METHOD
  1. Mix 1 tablespoon of olive oil with oregano, smoked paprika, and black pepper in a large bowl.
  2. Add halloumi, peppers, courgette, and red onion. Toss gently to coat.
  3. Thread halloumi and vegetables onto skewers, alternating as you go.
  4. Heat the barbecue or grill.
  5. Cook skewers for 8-10 minutes, turning occasionally, until the halloumi is golden and the vegetables are lightly charred.
  6. Meanwhile, mix remaining olive oil, lemon juice, lemon zest, garlic, and mint together in a small bowl.
  7. Drizzle the dressing over the cooked skewers.
  8. Serve immediately with a green salad.
OPTION 2 – THERMOMIX METHOD
Grilling is essential for the golden finish on this recipe. The Thermomix makes the dressing effortlessly:
  1. Toss halloumi and vegetables in olive oil, oregano, smoked paprika, and black pepper. Thread onto skewers.
  2. Heat the barbecue or grill to high. Cook skewers for 8-10 minutes, turning occasionally, until golden and lightly charred.
  3. Add garlic and mint to Thermomix bowl. Chop 3 sec/speed 7. Scrape down the sides.
  4. Add remaining olive oil, lemon juice, and lemon zest. Mix 10 sec/speed 3.
  5. Drizzle the Thermomix dressing over the cooked skewers before serving.
