This garlic herb shrimp and broccoli dish is a wonderful combination of lean protein and fibre-rich vegetables, dressed up with a garlicky, herbaceous flavour. It’s an ideal choice for a healthy dinner that doesn’t skimp on taste.

Ingredients
  • 1 lb shrimp, peeled and deveined
  • 1 large head of broccoli, cut into florets
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions

  • Preheat your oven to 200°C.
  • In a large mixing bowl, toss broccoli florets and shrimp with olive oil, garlic, basil, oregano, red pepper flakes, salt, and pepper.
  • Spread the mixture evenly on a baking sheet.
  • Roast in the oven for 12-15 minutes, or until the shrimp are pink and cooked through and the broccoli is tender.
  • Serve hot, ideal for pairing with a light quinoa salad or over a bed of brown rice.
