This Mushroom Spinach Frittata is packed with protein, vegetables, and flavour. It’s perfect for busy professionals who want something nutritious that can be prepared in advance and enjoyed throughout the week.

High in protein, low in carbs, and ready in just 25 minutes. Enjoy it warm or cold – it’s delicious either way.

   Cook Time: 25 minutes
Ingredients
  • 8 eggs
  • 250g mushrooms, sliced
  • 200g fresh spinach
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 50ml skimmed milk
  • 50g low-fat cheese, grated
  • 1 tsp dried thyme
  • Salt and pepper
  • Cherry tomatoes, halved

Directions

  • Preheat the grill to medium-high. Sauté onion and garlic in an oven-proof pan
  • Add mushrooms and cook until softened. Add spinach and cook until wilted. 
  • Whisk eggs with milk, season with salt, pepper, and thyme. Pour egg mixture over vegetables. 
  • Cook on the hob for 5 minutes until the edges set. Top with cherry tomatoes and cheese. 
  • Place under the grill for 8-10 minutes until set and golden. Slice and serve warm or cold.
