TURKEY STIR-FRY

Quick, Fresh, Protein-Packed

This turkey stir-fry comes together in under 20 minutes using one pan. Turkey mince, broccoli, peppers, and courgette all tossed in garlic, ginger, and tamari – simple ingredients that deliver big flavour without compromising your goals.

Ingredients
  • 300g turkey mince
  • 1 red pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 200g tenderstem broccoli, trimmed
  • 1 large courgette, cut into thin strips
  • 3 garlic cloves, minced
  • 20g fresh ginger, grated
  • 2 tablespoons tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon chilli flakes (optional)
  • 2 spring onions, sliced
  • Fresh coriander to serve
  • Lime wedges to serve
 

Directions

  1. Heat olive oil in a large wok or frying pan over high heat.
  2. Add turkey mince and cook for 5–6 minutes, breaking apart until browned and cooked through. Remove and set aside.
  3. Add sesame oil to the pan. Add garlic and ginger and stir for 30 seconds until fragrant.
  4. Add broccoli and peppers. Stir-fry for 3–4 minutes until beginning to soften but still with some bite.
  5. Add courgette and stir-fry for a further 2 minutes.
  6. Return the turkey to the pan. Add tamari and chilli flakes. Toss everything together for 1–2 minutes until well coated.
  7. Remove from heat. Scatter with spring onions and fresh coriander. Serve with lime wedges.
