TUNA STUFFED AVOCADO

Fresh, Simple, Tasty

A no-cook summer recipe that delivers serious protein in minutes. Ripe avocado halves filled with a light, flavourful tuna mixture. High in protein, rich in healthy fats, naturally low in carbohydrates, and ready in 10 minutes. Perfect for lunch or a light summer dinner.

Ingredients
  • 2 ripe avocados, halved and stoned
  • 2 x 145g tins of tuna in spring water, drained
  • 2 tablespoons low-fat natural yoghurt
  • 1 tablespoon Dijon mustard
  • Juice of 1 lemon
  • 2 spring onions, finely sliced
  • Small handful fresh parsley, chopped
  • ½ red chilli, finely diced (optional)
  • Salt and black pepper
  • Lemon wedges to serve

Directions

CONVENTIONAL METHOD
  1. In a bowl combine drained tuna, yoghurt, Dijon mustard, and lemon juice. Mix well.
  2. Add spring onions, fresh parsley, and chilli if using. Season with salt and pepper.
  3. Scoop a little extra avocado from each half to create more space if needed.
  4. Fill each avocado half generously with the tuna mixture.
  5. Serve immediately with lemon wedges and a simple green salad.

 

THERMOMIX METHOD
  1. Add spring onions and parsley to Thermomix bowl. Chop 3 sec/speed 5. Scrape down sides.
  2. Add drained tuna, yoghurt, Dijon mustard, lemon juice, and chilli. Mix 10 sec/reverse/speed 3.
  3. Season with salt and pepper.
  4. Fill each avocado half generously with Thermomix tuna mixture.
  5. Serve immediately with lemon wedges.
