COURGETTE & HALLOUMI FRITTERS

Crispy, Light, Delicious

Crispy on the outside, packed with flavour inside. These fritters combine grated courgette and halloumi with fresh herbs, pan-fried until perfectly golden. High in protein, naturally low in carbohydrates, and the kind of meal that makes healthy eating genuinely enjoyable.

Ingredients

  • 2 medium courgettes (approx. 400g), coarsely grated
  • 200g halloumi, coarsely grated
  • 2 large eggs, beaten
  • 2 tablespoons plain flour (or gluten-free alternative)
  • Small handful fresh parsley, chopped
  • Small handful fresh mint, chopped
  • 1 garlic clove, minced
  • Salt and black pepper
  • 2 tablespoons olive oil for frying

Directions

Conventional Method
  • Grate courgette into a clean tea towel and squeeze out as much moisture as possible. This step is essential for crispy fritters.
  • In a large bowl combine grated courgette, halloumi, eggs, flour, parsley, mint, and garlic. Season well with salt and pepper. Mix until combined.
  • Heat olive oil in a large frying pan over medium heat.
  • Drop heaped spoonfuls of the mixture into the pan and flatten slightly. Cook in batches for 3-4 minutes each side until golden and crispy.
  • Drain on kitchen paper. Serve immediately.
 
Thermomix Method
  • Add parsley, mint, and garlic to Thermomix bowl. Chop 3 sec/speed 5. Scrape down the sides.
  • Add grated courgette, halloumi, eggs, flour, salt, and pepper. Mix 10 sec/reverse/speed 3 until just combined.
  • Cook fritters in batches in a frying pan with olive oil, 3-4 minutes each side until golden. Thermomix cannot replicate the pan-fried finish.
  • Serve immediately.
