A comforting, high-protein dish that works for breakfast or an evening snack. The warm berry and apple stew is rich in fibre and antioxidants, paired with cool cottage cheese for a creamy texture and protein boost.

   Cook Time: 25–30 mins
Ingredients
  • 2 handfuls of mixed berries (blackberries, raspberries and blueberries)
  • 1 cooking apple 
  • 1 tsp cinnamon 
  • 150g of cottage cheese (full or low fat)

Directions

  • Peel and chop the apple into medium sized chunks
  • Add to a saucepan with your berries, cinnamon and salt. Cook on a low heat, with the lid on
  • Leave for 20-30 minutes until the fruit becomes soft and mousse-like, stirring occasionally
  • Spoon your cottage cheese into a bowl, topped with your warm fruit mousse
