Add the oil to a non-stick frying pan. Cook the chopped garlic for a couple of minutesAdd the spinach and rocket on a low-medium heat and cook for 4-5 minutes
Next strain as much liquid from the leaves as possible and add your greens back to the pan
Grate lemon zest over the top
Make one indentation in the centre around the leaves, into the hole place the egg whites followed by the whole egg on top
Place into the oven for 5-10 minutes, or until egg whites are cooked
Serve your green eggs onto a plate, season to taste and top with chilli flakes
