This miso-glazed cod recipe delivers bold flavours with minimal effort. With a simple marinade and fresh salad, it’s perfect for a healthy, satisfying dinner that doesn’t weigh you down. Ideal for busy weeknights or light weekend meals.

Cook Time: 10–15 mins
Ingredients
  • Lambs lettuce salad 
  • 10 radishes, grated 
  • ½ cucumber, grated 
  • 2 tbsp miso paste 
  • 1 tbsp mirin
  • 1 tbsp light soya sauce 
  • ½ tbsp sesame oil 
  • 30g fresh ginger, grated 
  • 2 cod fillets (230g each)
  • 4 spring onions, finely chopped 
  • ½ tsp of oil

Directions

  • Preheat the oven to 200C
  • Combine the miso, mirin, soya sauce, sesame oil and ginger to a bowl
  • Place each cod onto a large piece of foil, so that you can enclose the fillet. Then pour half the sauce onto each piece of fish. Add the spring onions then tightly seal the parcels
  • Place foil into a baking tray and bake in the oven for 10 minutes
  • Meanwhile, make the salad. Add lambs lettuce, radish and cucumber to a bowl. Add oil, a squeeze of lemon and season well
  • Place the salad around the sides of your plate and place your warm cod fillet in the centre
