Sometimes you just want something warm, satisfying, and wholesome without spending hours in the kitchen. This Organic Chicken Casserole brings together tender chicken thighs, earthy mushrooms, asparagus, and sweet peas in a rich, herby sauce. It’s simple, nourishing, and perfect for a cosy evening meal.

Cook Time: 30 minutes
Ingredients
  • 300g chopped mushrooms 
  • 600g boneless organic chicken thighs 
  • 50g frozen peas 
  • 70g chopped asparagus 
  • 250ml of chicken stock 
  • 3 shallots, finely chopped 
  • 3 sage leaves 
  • 1 tsp of olive oil

Directions

  • Add oil to a pan. 
  • Season your thighs with salt and pepper, and then brown the chicken in the pan on both sides. 
  • Next, cook the mushrooms in the same pan until soft. 
  • Meanwhile, boil the chopped asparagus for 5 minutes, or until cooked.
  • Place the shallots and sage leaves in the pan to cook on a low heat for 5 minutes. Add the stock and let it bubble for a few minutes.
  • Return the chicken, mushrooms and asparagus to the pan. Cook for 15 minutes.
  • Add the peas and cook for a final 2 minutes. Serve!
