A vibrant, flavour-packed soup that delivers protein in every bowl. King prawns simmered in a rich tomato and garlic base with fresh herbs. High in protein, naturally low in carbohydrates, low in fat, and ready in 30 minutes. Impressive enough for guests and simple enough for any weeknight.

Ingredients
  • 400g raw king prawns, peeled and deveined
  • 2 x 400g tins chopped tomatoes
  • 1 large onion, finely diced
  • 4 garlic cloves, minced
  • 1 red chilli, finely sliced (optional)
  • 500ml fish or vegetable stock
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Juice of 1 lemon
  • Small handful fresh basil, torn
  • Small handful fresh parsley, chopped
  • Salt and black pepper

Directions

OPTION 1 – CONVENTIONAL METHOD
  1. Heat olive oil in a large pot over medium heat. Add onion and cook for 5 minutes until softened.
  2. Add garlic and chilli. Cook for 1 minute until fragrant.
  3. Add smoked paprika and oregano. Stir for 30 seconds.
  4. Add chopped tomatoes and stock. Bring to a simmer and cook for 15 minutes until slightly reduced and rich in flavour.
  5. Add prawns and cook for 3-4 minutes until pink and just cooked through. Do not overcook.
  6. Squeeze in lemon juice. Season with salt and pepper.
  7. Scatter fresh basil and parsley over the top.
  8. Serve immediately.
OPTION 2 – THERMOMIX METHOD
  1. Add onion and garlic to Thermomix bowl. Chop 5 sec/speed 5. Scrape down the sides.
  2. Add olive oil. Sauté 5 min/120°C/speed 1.
  3. Add chilli, smoked paprika, and oregano. Cook 1 min/100°C/speed 1.
  4. Add chopped tomatoes and stock. Cook 15 min/100°C/speed 1.
  5. Add prawns. Cook 4 min/100°C/reverse/speed 1 until just cooked through.
  6. Add lemon juice. Season with salt and pepper.
  7. Scatter fresh basil and parsley over the top before serving.
