ORANGE SALAD WITH SLICED BEEF FILLET

Fresh, Light, Satisfying

Fresh, vibrant, and surprisingly satisfying – this orange and beef salad redefines what a healthy meal can be. The sweet citrus perfectly balances the savoury beef, whilst the creamy mozzarella adds richness without the guilt. It’s proof that eating well doesn’t have to mean boring salads.

Ingredients
  • 3 oranges (blood oranges best if you can find them) 
  • 2 balls of low fat mozzarella (around 150g) 
  • Small handful of basil, finely sliced 
  • 1 large handful of rocket 
  • 1 large handful of lambs lettuce 
  • ½ red onion, thinly sliced 
  • 1 tsp olive oil 
  • 1 tbsp red wine vinegar 
  • 1 tsp mustard 
  • 400g beef fillet

Directions

  1. Toast coriander seeds in a pan for a few minutes. Once cooled, crush them up
  2. Make the dressing; mix oil, vinegar, crushed coriander seeds, mustard along with the juice and zest of one orange. Season well 
  3. Peel the oranges, then slice them widthways
  4. Place the rocket and lamb’s lettuce on your plate. Tear the mozzarella into medium size pieces and scatter, followed by your orange pieces
  5. Sprinkle red onion and basil over the top, and finish with your dressing. 
  6. Next cook your beef fillet – fry it in a pan with ½ tsp. of olive oil, browning both sides. Once cooked to taste, remove. Slice your fillet into thin strips and enjoy alongside the salad.
