TURKEY SPINACH MEATBALLS Scaled

Tender meatballs made with lean turkey mince and wilted spinach, simmered in a rich homemade tomato sauce. Served over courgette noodles or wilted greens to keep the whole meal low glycaemic. The meatballs freeze brilliantly, making this a batch cooking essential.

Ingredients

For the meatballs:
  • 500g lean turkey mince (2% fat)
  • 100g fresh spinach, finely chopped
  • 1 egg
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • Salt and black pepper
For the sauce:
  • 2 x 400g tins chopped tomatoes
  • 1 onion, finely diced
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • ½ teaspoon chilli flakes (optional)
  • Small handful fresh basil, torn
  • Salt and black pepper
To serve:
  • 3 courgettes, spiralised, or 300g wilted greens

Directions

OPTION 1 – CONVENTIONAL METHOD
  1. Mix turkey mince, chopped spinach, egg, garlic, oregano, smoked paprika, salt, and pepper together in a large bowl. Roll into 16 meatballs.
  2. Heat olive oil in a large pan over medium heat. Brown meatballs for 5-6 minutes, turning occasionally. Remove and set aside.
  3. In the same pan add onion and cook for 5 minutes until softened.
  4. Add garlic, dried basil, and chilli flakes. Cook for 1 minute until fragrant.
  5. Add chopped tomatoes. Simmer for 5 minutes.
  6. Return meatballs to the pan. Cover and simmer for 15 minutes until cooked through.
  7. Season with salt and pepper. Scatter fresh basil over the top.
  8. Serve over courgette noodles or wilted greens.
 
OPTION 2 – THERMOMIX METHOD
Browning the meatballs in the pan is essential for flavour. The Thermomix handles the sauce beautifully:
  1. Add spinach and garlic for the meatballs to Thermomix bowl. Chop 5 sec/speed 7. Add to a large bowl with turkey mince, egg, oregano, smoked paprika, salt, and pepper. Mix by hand and roll into 16 meatballs.
  2. Heat olive oil in a large pan over medium heat. Brown meatballs for 5-6 minutes. Remove and set aside.
  3. Add onion and garlic to Thermomix bowl. Chop 5 sec/speed 5. Scrape down the sides.
  4. Add a splash of olive oil. Sauté 5 min/120°C/speed 1.
  5. Add chopped tomatoes, dried basil, and chilli flakes. Cook 8 min/100°C/speed 1.
  6. Transfer sauce to the pan with the meatballs. Cover and simmer for 15 minutes until cooked through.
  7. Scatter fresh basil over the top and serve over courgette noodles or wilted greens.
