GRILLED PRAWNS WITH ZUCCHINI NOODLES

Cook Time: 15 minutes
Ingredients
  • 500g large prawns, peeled and deveined
  • 4 large zucchini, spiralized
  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 1 lemon, juiced and zested
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp chilli flakes
  • Cherry tomatoes, halved
  • Sea salt and black pepper

Directions

  1. Season prawns with garlic, lemon zest, salt, and pepper
  2. Heat olive oil in a pan, cook prawns 2-3 minutes each side
  3. Remove prawns, add zucchini noodles to same pan
  4. Cook for 2-3 minutes until just tender
  5. Add cherry tomatoes, cook 1 minute
  6. Return prawns to pan with lemon juice and herbs
  7. Toss gently and serve immediately
