These Turkey Tomato Meatballs use lean turkey mince for a high-protein, low-fat meal that’s both satisfying and nutritious. Perfect for meal prep or feeding the family something they’ll actually ask for again.

Served over courgette noodles for a low-carb option, or paired with your favourite grain. Ready in 35 minutes with simple ingredients.

Ingredients
  • 500g lean turkey mince
  • 1 egg
  • 50g oats
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 2 tins (800g) chopped tomatoes
  • 1 carrot, grated
  • 2 tsp Italian herbs
  • Fresh basil
  • Salt and pepper
  • Courgette noodles to serve

Directions

  • Mix turkey mince, egg, oats, half the onion, half the garlic, salt, and pepper.
  • Form into small meatballs. Bake meatballs on a tray at 180°C for 20 minutes.
  • Meanwhile, sauté remaining onion and garlic. Add grated carrot, tomatoes, and Italian herbs.
  • Simmer sauce for 15 minutes. Add cooked meatballs to sauce.
  • Simmer together for 5 minutes. Garnish with fresh basil and serve over courgette noodles
