Baked sea bass is easy to prepare and has a delicate texture and mild flavour that works perfectly for a lighter meal. Rich in omega-3 fatty acids and lean protein, this dish supports heart health and muscle recovery whilst being ready in under 30 minutes.

Ingredients
  • 2 whole sea bass (about 400g each), gutted and scaled (or 4 fillets)
  • 2 tablespoons extra virgin olive oil
  • 1 lemon (half sliced thinly, half for juice)
  • 3 garlic cloves, thinly sliced
  • Fresh herbs (thyme, rosemary, or parsley)
  • Sea salt and freshly ground black pepper
  • Optional: cherry tomatoes and olives for roasting alongside

Directions

  • Preheat the oven to 200°C.
  • Rinse the sea bass under cold water and pat dry with kitchen paper. Using a sharp knife, make 3-4 diagonal slashes on each side of the fish.
  • Rub the fish inside and out with olive oil. Season with sea salt and freshly ground black pepper, making sure to get into the slashes and cavity.
  • Place lemon slices, garlic, and fresh herbs inside the cavity of each fish.
  • Line a baking tray with parchment paper or lightly oil it. Place the fish on the tray. Drizzle with a little more olive oil and scatter any remaining garlic, herbs, and lemon slices over the top. If using, add cherry tomatoes and olives around the fish.
  • Bake for 18-20 minutes (for whole fish) or 12-15 minutes (for fillets), until the flesh is opaque and flakes easily with a fork.
  • Transfer to serving plates, squeeze fresh lemon juice over the top, and garnish with fresh herbs.
  • Serve immediately with roasted Mediterranean vegetables, steamed greens, or a crisp salad.
