This roasted cauliflower turns a simple vegetable into something special. Tossed with warming spices and roasted until golden, it’s crispy on the outside and tender inside. Low in calories but high in flavour and fibre. It works perfectly as a main or side dish.

   Cook Time: 35 minutes
Ingredients
  • 1 large cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • Fresh coriander, chopped
  • Sea salt and black pepper

Directions

  1. Preheat the oven to 220°C. In a large bowl, combine olive oil, cumin, paprika, coriander, turmeric, and garlic.
  2. Add cauliflower florets and toss until evenly coated. Season with salt and pepper.
  3. Spread cauliflower in a single layer on a lined baking tray.
  4. Roast for 30-35 minutes, tossing halfway through, until golden and crispy at the edges.
  5. Remove from the oven, squeeze lemon juice over the top, and garnish with fresh coriander.
  6. Serve immediately as a main dish or side.
