Ingredients
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Crumbled feta cheese or avocado slices for topping (Optional)

Directions

  • In a large mixing bowl, mix chickpeas, cherry tomatoes, cucumber, red bell pepper, and red onion.
  • Incorporate the chopped parsley and basil.
  • In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper.
  • Pour dressing over the salad and toss thoroughly to coat.
  • For best flavour, let the salad chill in the refrigerator before serving.
