This chickpea traybake is a simple, satisfying vegetarian meal packed with roasted vegetables, crispy chickpeas, and a hint of spice. Finished with a touch of feta, it’s perfect for meal prep or a no-fuss dinner.

Ingredients
  • 600g of chickpeas, drained and rinsed
  • 1 tsp. chilli flakes 
  • 1 tsp. sweet paprika 
  • 1 tsp. dried oregano 
  • 300g cherry tomatoes 
  • 1 aubergine, cut into small cubes 
  • 1 red pepper, cut into small cubes 
  • 1 red onion 
  • A sprinkle of feta 
  • ½ tsp of olive oil

Directions

  • Heat oven to 180C
  • Toss the chickpeas with your herbs and chilli. Roast for 15 minutes or until chickpeas turn golden brown and crispy
  • Meanwhile fry the onion and aubergine in a pan with oil until golden
  • Next add the tomatoes, red pepper and aubergine to your chickpea-roasting tray. Toss together and return to the oven for another 10 – 15 minutes until piping hot. Season to taste and sprinkle with feta
