Creamy Cauliflower Soup is a simple yet satisfying meal that’s perfect for any time (or day) of the week. Whether you’re in need of a quick lunch option or a comforting dinner, this soup will delight your taste buds and your health.

Serves: 4
Cook Time: 35 minutes (Including steaming the chicken)
Ingredients
  • 1 white onion 
  • 3 garlic cloves 
  • Handful of chives 
  • 1 cauliflower head, chopped into florets
  • 850ml homemade chicken/vegetable broth 
  • 1 organic chicken breast (optional) 
  • ½ tsp of olive oil

Directions

  • If you would like to add chicken, season your breast then steam for 15-20 minutes. Once cooked, shred into small pieces with two forks. 
  • Add the olive oil to a non-stick pan and add your chopped white onion. Allow the onion to heat up slowly on a low flame for around 5 minutes. Add the chopped garlic cloves and cook for another 2 minutes. Make sure they don’t burn.
  • Add the chicken vegetable broth. Stir in cauliflower and bring to a boil.
  • Lower the heat and cover with a lid for about 25 minutes, or until the cauliflower is very soft.
  • Whiz together until smooth.
  • Season with salt and pepper, then sprinkle some fresh chives over the top. 
  • If you have chosen to include chicken, mix in the shredded chicken to add a nice bite to your soup.
