Need something light, quick, and packed with flavour? Our Green Egg Special is oven-baked with rocket, spinach, garlic and lemon zest — finished with a little heat from chilli flakes. Perfect for breakfast, brunch or a post-training refuel.

Serves: 1  |
   Cook Time: 15 minutes
Ingredients
  • 100g of rocket
  • 100g spinach 
  • 1 whole egg, 2 egg whites 
  • 1 unwaxed lemon 
  • Chilli flakes 
  • 1 garlic clove, chopped 
  • ½ teaspoon of oil

Directions

  • Preheat the oven to 150C fan
  • Add the oil to a non-stick frying pan. Cook the chopped garlic for a couple of minutes Add the spinach and rocket on a low-medium heat and cook for 4-5 minutes
  • Next strain as much liquid from the leaves as possible and add your greens back to the pan 
  • Grate lemon zest over the top
  • Make one indentation in the centre around the leaves, into the hole place the egg whites followed by the whole egg on top 
  • Place into the oven for 5-10 minutes, or until egg whites are cooked
  • Serve your green eggs onto a plate, season to taste and top with chilli flakes
