This Mediterranean Fish Bake combines white fish with roasted vegetables and Mediterranean flavours for a complete, nutritious meal. Everything cooks together in one dish, making it perfect for busy weeknights.

High in protein, packed with vegetables, and ready in 30 minutes. The kind of meal that proves healthy eating can be both simple and delicious. Fresh, flavourful, and fuss-free.

   Cook Time: 30 minutes
Ingredients
  • 4 white fish fillets (cod or haddock)
  • 2 courgettes, sliced
  • 1 aubergine, cubed
  • 200g cherry tomatoes
  • 1 red onion, sliced
  • 3 garlic cloves, minced
  • 1 lemon, sliced
  • 100ml vegetable stock
  • 2 tsp dried oregano
  • Fresh basil
  • Kalamata olives (optional)
  • Salt and pepper

Directions

  • Preheat oven to 190°C. Place vegetables in a large baking dish.
  • Drizzle with vegetable stock, garlic, oregano, salt and pepper.
  • Roast vegetables for 15 minutes.
  • Place fish fillets on top of vegetables.
  • Top with lemon slices. Cover with foil and bake for 15 minutes.
  • Remove foil for the last 5 minutes.
  • Garnish with fresh basil and olives. Serve immediately.
