Fresh, colourful, and bursting with flavour, this salad combines juicy prawns with crisp vegetables and a zesty lemon dressing. It’s quick to prepare, rich in lean protein, and perfect for a refreshing meal that keeps you feeling light and energised.

Ingredients
  • 400g large prawns, peeled
  • 2 cucumbers, diced
  • 200g cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 100g baby spinach
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 lemons, juiced
  • 1 tsp olive oil
  • 1 tsp dried oregano

Directions

  1. Cook prawns in a non-stick pan for 2–3 minutes per side until pink.
  2. Combine cucumber, tomatoes, onion, and spinach in a bowl.
  3. Add cooked prawns on top.
  4. Whisk lemon juice, olive oil, and oregano to make a dressing.
  5. Toss salad with dressing and herbs. Serve immediately.
