These Mediterranean vegetables bring colour and nutrition to your plate. Courgettes, peppers, and tomatoes roasted with garlic and herbs create a vibrant, satisfying dish. Low in calories but packed with vitamins and antioxidants.

Ingredients
  • 2 medium courgettes, cut into chunks
  • 2 red bell peppers, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 300g cherry tomatoes
  • 1 small aubergine, cut into chunks
  • 4 garlic cloves, whole and peeled
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Fresh basil leaves
  • Balsamic vinegar for drizzling
  • Sea salt and black pepper

Directions

  1. Preheat the oven to 200°C. In a large bowl, combine courgettes, peppers, onion, tomatoes, aubergine, and garlic.
  2. Drizzle with olive oil, sprinkle with oregano and dried basil. Season with salt and pepper. Toss to coat evenly.
  3. Spread vegetables in a single layer on a large lined baking tray. 
  4. Roast for 30-35 minutes, tossing halfway through, until vegetables are tender and slightly caramelised.
  5. Remove from the oven, tear fresh basil leaves over the top, and drizzle lightly with balsamic vinegar.
  6. Serve immediately or at room temperature.
