A great vegan alternative to eggs, this tofu scramble is rich in plant protein and full of flavour. Add your favourite veggies and you’ve got a balanced, energising start to the day – all in under 15 minutes.

Cook Time: 10–15 mins
Ingredients
  • 1 block packet of firm tofu
  • 2 tbsp nutritional yeast 
  • ¼ tsp turmeric powder 
  • ¼ tsp garlic powder 
  • 2 tbsp non-dairy milk 
  • ½ tsp olive oil 
  • Vegetable side of choice (mushrooms, etc.)

Directions

  • Mash up your tofu with a potato masher (or a fork) so that it crumbles into small pieces
  • Add oil to a pan over a medium heat and add your tofu
  • Cook for 4 minutes, stirring often
  • Next add the turmeric, garlic, nutritional yeast and season with salt and pepper. Cook for another 5 minutes; make sure to be constantly stirring
  • Pour your milk of choice into the pan, and mix in well. 
  • Meanwhile, choose a vegetable to accompany your scrambled tofu. Steamed kale, mushrooms or even freshly sliced tomatoes go very well with this vegan scramble!
