This protein-packed salad is a fresh and satisfying twist on the French classic. Tender green beans, salty olives, punchy capers, and flaky tuna make this a bold, briny, and energising meal with hardly any prep. It’s ideal for a quick lunch when you want something light, healthy, and full of flavour.

Cook Time: 15 minutes
Ingredients
  • 15 green beans, chopped in half 
  • 1 can of tuna 
  • 2 cups of baby gem lettuce, sliced 
  • 8 pitted kalamata olives 
  • 2 tbsp of capers, roughly chopped 
  • ½ red onion, finely sliced 
  • 10 cherry tomatoes, chopped in half 
  • 1 tbsp balsamic vinegar  
  • 1 tsp olive oil 
  • 1 tsp mustard

Directions

  • Boil your beans for around 10 minutes. 
  • Wash and slice your baby gem lettuce. Add to your salad bowl.
  • Add your tomatoes, green beans, tuna, olives, capers, tomatoes and red onion on top. 
  • For the dressing; whisk together the oil, vinegar, mustard, salt and pepper. Pour over the top of your salad.
